At eighteen, the player ‘baby rhino’ joined Bristol in 2013. On December 8, 2013, he made his first club debut against the Scottish side Gala.

The skilled athlete was named to the Leicester squad on March 12, 2016, replacing Marcos Ayerza, and made his debut against the rugby team “Bath” at the recreation ground on May 7, 2016.

 The British rugby sportsperson first appeared as a regular for Leicester in the 2016–2017 season, appearing in 31 games. He led Leicester for the first time before being chosen to succeed Tom Youngs as permanent captain for the 2021–2022 Premiership Rugby seasons.

On May 28, 2016,  the England national rugby team member was named to the England team. He played his first international match at Twickenham against Wales in the 66th minute as a replacement, and his team finished with a score of 27–13, winning the match.

In the 2016–17 season, he was a regular for Leicester, earning the Premier League Discovery of the Season Award and starting his first match for England during their tour of Argentina.

Ellis led Leicester for the first time in September 2020 after scoring the game-winning try against Scotland in the 2020 Six Nations Championship. He also started for England in the Autumn Nations Cup. When Leicester defeated Saracens 15-12 in the Premiership Final in 2022, they won their first league championship in nine years.

In 2022, the rugby athlete moved back to Bristol from Leicester, stating his desire to be near his family and be able to visit them frequently. He was a member of the England team that traveled to Australia in 2022 and scored a try in the opening match.
