However, the journey Dabbous’s reached today has taken a lot of graft, determination, and grit. This all began as he was old enough to get into a restaurant kitchen scene in London. To his passion for cooking, the British chef says:
I became a chef simply cause I loved eating. I think many people are good at certain things but cooking is something that I picked up quite quickly.
So as soon as I was legally allowed to cook I got holiday jobs in several kitchens.
Reportedly, the talented chef is 39 years old as of this writing.
However, Ollie struggled in other areas as he revealed that his family wasn’t particularly into food. However, his grandmother supported his dreams, being a good cook herself.
Ollie first opened his restaurant Dabbous in 2012 and received critical acclaim.

Chef Ollie Dabbous opened one of the most ambitious culinary projects the city has ever seen, the restaurant Hide. The business showcases his iconic ingredient-led cooking in stunning surroundings.
Hide is a famous restaurant and bar, managed and opened by Hedonism Wines and Ollie Dabbous. Likewise, the place is set over three floors, flooded with natural daylight, and enjoying views across Green Park.
His other restaurant, Dabbous’ success catapulted the chef into the culinary spotlight. Also, since 2012, for four years, the tables at his restaurant were one of the hottest tickets in the capital.
Ollie launched two other restaurants Barnyard and Henrietta. However, he shut them all down in 2017 to completely focus his attention on Hide. The chef said:
The opportunity to collaborate on Hide saw several challenges and possibilities too compelling to deny.
I have the same hunger now as I did when I first put on an apron, and look forward to creating a thriving business, sustainably operated and enjoyed by everyone.
Ollie was also approached by Yevgeny Chichvarkin to see if the chef would be interested in working on one of the biggest restaurant projects London had seen for years. Chichvarkin serves as the owner of Hedonism Wines in Mayfair.
